We carry out a manual harvest in boxes of 15 kg allowing the fruit to macerate at low temperature in a cold room 24 hrs. We make a selection of clusters and later alcoholic fermentation in 500 kg barrels, then it goes on to new French and American oak barrels where the malolactic fermentation takes place and we grow for 22 months.


We do not use selected yeasts with minimal human intervention.

After bottling it has been 16 months in the bottle before going to market.
