Sinopia is a light red wine made entirely from Grenache Noir, certified Organic Agriculture, and crafted with a focus on preserving the natural aromatics of the grapes. ​ The vinification process includes 25% direct pressing and 75% cold maceration for 24 hours, resulting in a particularly light red-orange color. ​ On the nose, it reveals lively aromas of sour cherries, berries, caramel, grilled tofu, and hints of garrigue (thyme, rosemary). ​ The palate is ample and warm, showcasing sour cherry flavors alongside notes of caramel and silky tannins, balanced by delightful liveliness and aromatic complexity. ​ With a well integrated alcohol content of 15.5% vol, Sinopia shows a freshness and vibrant expression of the Vingrau terroir, near the Pyranees in the border of Spain and France.
